Badness

I'm in a cooking/baking mood and when the weather cools off I wanna eat! I came up with this awful concoction the other day that I'm hoping will help my booty get right since I lost most of it when I had Nia ;-)


Uka calls it the Abe Lincoln (why? I don't know).

It's an oatmeal cookie/dulce de leche ice cream sandwich. I used the oatmeal cookie recipe from the Quaker Oats lid  - it's my favorite! I leave out the raisins though (Love Birds don't like them):

Quaker Vanishing Oatmeal Cookies

Ingredients
1/2 lb unsalted butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup raisins

Directions

Heat oven to 350 F. In a large bowl, beat butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.

Drop dough by rounded tablespoons onto ungreased cookie sheets lined with parchment paper. Bake 10-12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

*The official recipe says it makes 4dz but it's more like 3!

  2. I've been on a cookie binge too, but I don't need my butt to get any wider so I am going to block this image from my mind....ahhhh! c-o-o-k-i-e!
